Aaaaaahhhhhh.
I went shopping, as in big-time shopping, on Friday and now we have a variety of meat in our fridge waiting to be cooked and frozen. I was thankful to have a menu plan last week so our all-chicken-all-the-time week wasn’t a complete disaster.
We did laugh that Tuesday’s night’s meal of Chicken Fried Rice was pretty much the exact same meal as Monday’s baked chicken breasts and rice, just put together differently.
Whatever works, right?
Anyway, this week’s meals will take some time to prepare because I’ll be doing work that will benefit our family for quite some time.
Monday – Grilled Chicken and Macaroni and Cheese (I’ll cook a few extra chicken breasts for future meals, and trim the rest of the 10 pounds of raw chicken, divide it into meal-sized portions, and freeze.)
Tuesday – Meatballs in mushroom gravy over mashed potatoes. (While I’m making this, I’ll also brown the rest of the 20 lbs of ground beef to freeze for future meals.)
Wednesday – Spaghetti that will be ready in minutes using the cooked ground beef from Tuesday
Thursday – Crock Pot BBQ chicken sandwiches
Friday – Out to eat!
Saturday – Potato Soup (This keeps getting put off, but it still sounds so good.)
Sunday – Home groups.
All of that trimming, dividing, and pre-cooking will be quite a bit of work, but I’m excited to have a full freezer again!

I made meatball subs last week, and they were a huge hit. Family asked that I put them on the "rotation."

Mmmm. Meatball subs? That sounds really good. I may have to try those.

I have reheated frozen cooked meatballs in spaghetti sauce, put on a roll and top with provolone cheese. Yum!

I love browning a ton of ground beef all at once! It makes cooking SO much easier once it's done. Speaking of…I need to do that. Soon. My freezer is sadly lacking in little white containers of browned beef…

Your plan sounds really ambitious, but doable. Do you season your meat as you cook it, or do you season it after you pull it out of the freezer?

Hi Kara, I season it with garlic and onions, because that will work in any recipe. Then I add taco-seasoning or whatever when it's time to make a meal with it.
