Have you seen my new Recipes page at the top of the page? I’m thankful for the motivation from Laura over at Orgjunkie to make one. She now has an ongoing link-up where bloggers can share their recipe pages. Such a fabulous resource of real-life recipes!
I’m calling this the Uninspired Edition because I’m feeling . . . uninspired. As I began typing I had no idea what I was going to put on the menu. Even now, I only have one idea that I can’t do until Wednesday, because that’s when I’ll stop by Target where ground beef is on sale.
Here goes.
Monday – Chicken Fried Rice
Tuesday – Chicken Spaghetti (Can you tell that pre-cooked chicken is about all I have on hand right now?)
Wednesday – Cheeseburger soup. I saw this recipe on Feels Like Home last week, and was so excited. My normal friend made it for us once – just because. It sounds so good that I’m sad I don’t have what I need to make it right now, but I’ll be looking forward to Wednesday.
Thursday – Round Steak in the Crock Pot. I’m motivated to make this, because several of you requested the recipe, and I’d like to post it (with pictures). I didn’t end up making it last week because my sweet daughter was sick and couldn’t hold out long enough in the store for me to examine meat prices.
Friday – Out to Eat
Saturday – Homemade Pizza
Sunday – Superbowl Party – My contribution will be my cheese dip with its secret ingredient, which I just realized that I didn’t include on my recipe page.
THIS is why I make a menu plan. I could have gone all week long without a plan.
Panicking every single night.
Feeling uninspired . . . every single night.
Instead, I trudged through and made a plan, and now I don’t have to dread 5:00, six times in the next seven days.

Well done planning even when you felt uninspired. I get that way, too. I just know that I've made the same things over and over again because they're the only meals that fit the budget! Then I look back over the last month of meals and it's not as boring as I thought. Another good reason to menu plan: you can reap inspiration from your past menus!

We loved your chicken "faux" alfredo so much, we decided to make the chicken fried rice last night. Hubby used can chicken instead of fresh so it wasn't as good as it could be, but was still wonderful. We were actually going to make your taco soup but I wasn't paying attention and picked up chili seasoning instead of taco seasoning. Later this week, we're going to make stirfry and eat leftover fried rice with it. Between you and Fishmama, we will be eating a new recipe every night this week. I'm sorry you aren't inspired because you have certainly inspired me. 🙂

So glad you've been able to use some of my recipes, Shannon! I'm so impressed that you're trying so many new recipes in one week! I'm excited to try the cheeseburger soup tomorrow, but the weather may mean I can't get to the store for the meat. Grrr.

That soup sound delicious! Since it is about – 17 celsius (1.4 F, if I’m correct?) here in Sweden right now, I’m hooked on soups and stews for the moment.
I just got one question. Since Velveeta don’t excist here in Sweden, I have to replace it with something. But I’m not sure of what it is exactly. Is it a soft spread cheese or a hard one?

It’s a soft, squishy fake-cheese. Half-nasty, half-delicious. When I lived in Thailand, I would get a Kraft cheese block that was called cheddar, but was white. (Cheddar’s orange here.) It was a sort-of-okay substitute. You could make a cheese sauce like in a homemade mac and cheese recipe. Basically, a white sauce/gravy with shredded cheese melted in. Does that make sense?

There is a recipe for homemade velveeta at http://www.momables.com she uses chedder cheese and american cheese plus a few other things and it can be made in the crockpot or the microwave. She tried dozens of recipes to find one that was good.
