I know there are many people who survive in the kitchen by serving certain meals on certain days of the week.
Generally, we don’t do this, but lately Monday has become our Chicken and Veggies night.
After our Two Weeks of Only Fruits and Veggies a while back, we decided to make at least one meal a week that was primarily fresh fruits/veggies with a little chicken thrown in.
Monday works best because Tuesday is trash day and as we all know . . . there are few smells worse than schtanktified chicken juice. And even the smallest drop of chicken juice can fully schtanktify in less than twenty-four warm-weather hours.
The last few weeks, I’ve cooked two meals worth of chicken on Monday night, making another meal that much easier later in the week.
Things I’m loving about this current system:
(I’m calling it “current” rather than “new” because if I declared it to be our routine-for-the-rest-of-time, the minute I hit publish for this post I’d get a call saying baseball practice will be held on Mondays. Starting tomorrow.)
- Knowing that this is “Monday’s meal” really does make meal planning easier.
- It’s encouraging and exciting to see how the kids truly do not miss having a carb when there are plenty of the veggies that they love.
- I’m more purposeful about picking up fresh stuff.

So what’s on our menu this week?
Monday – Chicken and veggies.
Tuesday – Leftover BBQ chicken sandwiches from the freezer
Wednesday – Chicken Fajita Salad (using chicken cooked on Monday) and quesadillas for the kids
Thursday – Out to eat for birthday girl’s dinner!
Friday – ???
Saturday – Pizza

We will usually have something that does not make good leftovers on Friday and/or Saturday, because we take leftovers to work as office lunch. ^^

glad you like the system.. we havent gone to no carb days yet… but in the last few months ive tried to incooperate more veggies into our diet… one thing ive found to help with the healthier life style… im an, i guess you could say addicted to mt dew person..and ive never liked plain water. tried many things but never stuck with them.. but this new mio stuff is great… found the mio energy green thunder and its like non carbonated mt dew…. ( not in a bad way)… love it… still have the caffine which ive come to rely on but no cal or carbs or sodium… love it… hopefully some day ill be to the point of doing something like your 2 week challenge!

I work & volunteer from 8:30 a.m. to 8:30 p.m. on Mondays, but Sunday nights are usually free. So I’ve been putting meals in the crock pot on Sunday night to cook overnight. Then I can pack lunch and dinner on Monday. When I forget or am too lazy on Sunday, I end up spending money and cursing myself on Monday, so I’m trying to be more consistent. 🙂

i dont have certain nights for certain meals yet but i do try to plan atleast 1 night using the crockpot and now wednesdays are leftover fend foryourself nights. i live with my parents now and i plan meals, ect but i think things may be different once i am on my own!

I love having meal routines–it makes planning so much easier. We follow Meatless Monday http://www.meatlessmonday.com and usually have homemade pizzas or hot dogs and popcorn on Friday nights–which used to be family movie/game night. My daughter has softball games on Friday nights now–so not sure how that is going to work now. I also try to incorporate leftovers into new meals–like if I plan beans and rice bowls for a meatless monday then I might have chicken burritos the next day to use up leftover rice and beans. Like you said about making extra chicken–I try to get my husband to cook out chicken on weekends–and cook extra so I have it to incorporate in meals later in the week. Saves me a bunch of cooking and heating up the kitchen too! =) I didn’t comment–but I loved all the garage sale tips…we are planning one in about a month!

When I was growing up, weekend meals were pretty much set in stone. Fridays were always pizza, Saturdays usually meant a big pot of chili, and Sundays were either fried chicken or a roast. The rest of the week was basically a handful of meals over and over and over…which is probably why I’ve never really gotten into scheduling meals. In fact, I usually don’t know what I’m having until about two hours before it’s time to start cooking.
But I do like the idea of suppers with fewer carbs and more fruits and veggies. For one thing, carbs tend to make me crash about an hour after eating them. For another, after finding out how sick gluten makes me, it’s just really hard to find substitutes that are as good as the real thing. And frankly, I just feel better when I limit the carbs.
One of my favorite low-carb side dishes is to cook cauliflower until tender, and then add some cream and cheddar cheeses to taste. But I’m also a huge salad lover, so meat and a salad with a Texas Roadhouse 1000 Island dressing copycat recipe works very well for me. In fact, I love that salad so much I could probably do without the meat altogether. Hmm. Maybe it’s time to whip up some dressing tonight, boil a few eggs, make a Waldorf salad, and have just a variety of salads tomorrow.:)

One semester in college I had a night class on Mondays. My roomate and I ruled Monday night Pasta Night. That way we never had to think about it between day classes and night class, and it was a quick meal.

As a Catholic girl I have ‘meatless’ Fridays 🙂 That’s all. But I like the idea, maybe I’ll think about being more specific 😉

Since I’ve been working most Thursdays, hubs brings home pizza from work those days, so the kids always know what they’re getting.
My Mom grew up in always having Chicken on Sunday after church, so when she’s in town I bank on chicken after church usually, or if we already have something to make, we try to at least work it in by Monday.
