Picnic Ideas – Pizza Pockets

One more week of baseball has been checked off the calendar.As promised, I’m sharing our picnic suppers from the previous week with my Menu Plan Monday post.  Last week, for our five-hours-straight-of-games night, we had pizza pockets, warm out of the oven and wrapped in foil.  They were a huge hit!

The how to:

First, remove from the fridge the mixing bowl you used to make rolls at Easter.  Fill with warm soapy water, and scrape the last resistant bits off with your fingernails.

This is the bowl that had just a smidge more than would fit in your muffin-tins.  A smidge you decided to keep because you knew you could surely do something with it.

Oh wait.  That’s just me.  You can probably start with the next step.

Make the dough. I use this breadstick recipe, which is the same one I use to make Breakfast Pockets.  This is the most time-consuming step because the dough has to rise.

While the dough rises, brown your sausage or ground beef, and/or chop your pepperoni into small pieces.  I use my beloved Ulu Knife.

(Chopping the pepperoni makes it easier to spread onto the dough.)

Be sure to flour your surface before you roll out your dough.  Otherwise it sticks and is very difficult to use.  Trust me.

After rolling out the dough, cut it into squares using a pizza cutter.

Put sausage, pepperoni, and mozzarella cheese in the center of each square.

I use a spatula to lift the dough and then I bring all of the sides together to seal it into a pocket.

My pockets are rarely perfect, so don’t fret if yours is ugly.  They turn out just as yummy as the pretty ones!

 

Bake as directed on the breadsticks recipe.

After they were cooked, I wrapped the individual pockets in foil, and placed them in the top section of our soft-sided cooler.

For Hubby and me, I made salads:

Not a bad dinner for a night at the ballpark!

And here’s this week’s menu plan:

Monday – Baked Chicken Nuggets (They’ve been on the menu for three weeks, and I’m hoping I’ll actually make them this time!)

Tuesday – Spaghetti

Wednesday – Chicken Parmigiana Sandwiches (This is our picnic meal for the week.)

Thursday – Meatballs in mushroom gravy over rice.

Friday – Out to Eat

Saturday – Grill burgers.

    Great idea! And why haven't I thought of salad in a cup before? So much easier when you're on a picnic. Yesterday, my hubby grilled burgers, and I had him grill some boneless, skinless chicken while he was at it. Thats for dinner tonight! 🙂 Along with some veggies and stuff, too, of course.

    Duckville, we had them dry at the ballgame, but they tasted great and no one complained. The next day, when we had friends over for lunch, I poured spaghetti sauce into individual ramekins for dipping.

    I work as a home health nurse and put salad in a quart mason jar with the lid on it. No mess in the car. Here is WV we have pepperoni rolls. Just bread dough & pepperoni, bake and done.

    EXCELLENT! Wish I had had this recipe too as we were doing ball games nightly. Sloppy joes is one that worked well for us.

    Sahmmy, we have frozen them, already baked. They do best if you just defrost them in the microwave. Generally that gets them warm enough and they are good. Re-cooking them makes them overly chewy!

    SAHMmy, I think they would be great if you reheated them in the oven, straight from frozen. Probably even better than the micro. I'm just impatient . . .
