Time to get creative and clean out the freezer.
Even though “creative” sometimes scares me (and my husband) a little.
Saturday night, I felt inspired to make a Greek lemon rice soup that I’ve had before and loved. The recipe I ended up going with called for the “juice of three lemons” but I only had bottled lemon juice which didn’t give a conversion amount.
So I guessed.
And I guessed wrong.
My normally willing-to-eat-anything husband could only down one spoonful, and the kids literally cried out in horror. I tried to be brave and eat it anyway, but gave up after about five bites.
Consequently, I’m not in the mood to get very creative this week.
Monday – Grilled chicken breasts and buttered pasta
Tuesday – Chicken Stir Fry with Ramen noodles
Wednesday – Crock pot BBQ Chicken Sandwiches
Thursday – Jambalaya
Friday – Dinner Out
Saturday – ??? (NOT lemon rice soup.)
Sunday – Home groups . . . someone else cooks.

Sorry about your soup! So what do you have on hand for times like that? We have so many times when meal time gets blown or change of schedule that I need non-cooking fast items, and we end up eating Totino's pizza or pb&j.

We ended up having salami and crackers instead. The kids were happy.

I wonder if there would be anyway to guess a conversion like that correctly, wouldn't each lemon produce a different amount of juice? I have to ask though, how much lemon juice did you use? I give it up to you for trying what seems like an exotic recipe, Id be scared to try it even with the 3 lemons.

I ended up using about 1/2 a cup. I was thinking each lemon might produce 1/3 cup of juice, and I was trying to go low.

Old post, but I have a soup story for you. My cousin has a wonderful recipe for potato soup that calls for evaporated milk. The first time I made it, I had gotten all the ingredients, and was cooking away.. After adding the milk, I tasted it, and just.. couldn’t figure out what I had done wrong. The soup was SWEET.
My younger self did not realize there was a difference between evaporated milk and Sweetened Condensed Milk. I could tell the soup was supposed to be good.. but it was sweet. So so sweet. Needless to say, I know there is a difference now, and the soup has become a family favorite.
