Menu Plan for the First Normal Week of Summer

Yes.  I know it’s mid-July.

This is truly our first normal week.  We’ve been involved in baseball season followed by city baseball playoffs followed by vacation followed by district baseball playoffs.

Unfortunately (no, really), both boys lost last week and we no longer have to worry about eating and living around a sometimes-not-announced-until-the-day-before playoff schedule.

I’m okay with that.

Here’s our menu plan for the week:

Monday – Chicken Tacos

Tuesday – Asian Slaw

Wednesday – Chicken Parmesan Casserole

Thursday – (hoping to be at an amusement park)

Friday – Out to eat

Saturday – Grilled Chicken and baked potatoes

Sunday – Leftovers

    I have to plan both lunch (that is the big meal around here) and dinner, so our menu plan is quite long. Mostly it involves the same dishes each week (fake-carbonara spaghetti, honey ribs, nachos or tortitas, chicken strogonoff, hake fillets with caramelized onion, rice “a la cubana”…), so it is easy. I should try some new recipes to add a little variety, though, but cooking with a 2mo is proving to be hard!

      Simplicity is the only way to go with a 2 month old! Sounds like you’re doing great!

    Your chicken parmesan casserole looks so yummy. I enjoy chicken parmesan; I think it will be easier to put together in a casserole.

    Well, we’re just starting our districts baseball this week, and ending another tournament tonight. We have been loving and living your “ham and turkey hoagie”, “taco in a bag” and “pizza snowballs” (my kids LOVE these!) When we are home it’s something quick on the grill. And since the garden is in full swing…yellow squash and zucchini. Lots of zucchini.

    Your menu sounds easy and simple! Enjoy time at the amusement park! 🙂
    On our menu we have a few new chicken recipes to try and lots of veggies! 🙂
