Menu Plan Monday – And a Picnic Report

Have you been waiting by your computer to see my picnic idea from last week?

Technically . . . we did have a picnic.  I’m calling it that even though we ended up eating in the car after narrowly escaping a torrential downpour.

And I’m calling it that even though on the nifty picnic idea I had planned.  We had pizza.  As in, $5 pizzas from Little Caesar’s.  I could go into all of my excuses for not creating an exciting and creative and homemade meal to bring to the ballpark, but I won’t. They’re the usuals.

I’m hoping to do better this week:

Monday – Chicken Fried Rice

Tuesday – Tuna Casserole

Wednesday – Chicken Parmigiana Sandwiches (We’ll give this picnic supper idea another shot.)

Thursday – Mexican Casserole

Friday – Out to Eat

Saturday – Grill out.

Sunday – Dinner with friends.

Whew.  It feels good to have that plan done.  Even when I don’t follow it perfectly, it still helps life run much more smoothly.

    Pizza Pizza! That is an economical and quick plan! Good job Momma. We had some funky rain here last week, which is great because we NEED it so bad.

    Make sure and post updates on your progress this week. I am working for the same goal. My 8 year old is going to day camp this summer but the 11 year old is staying home so I need to get him settled in some sort of routine to help with the cleaning too.

    My menu plan for the week:

    Sunday – Pork chops, left over rice w/cream of mushroom

    Monday – Steak and Shake! (we didn't go out all weekend so my boyfriend offered to take me "out" – I love my guacamole burger!!)

    Tuesday – something with ground beef. Probably hamburger helper, because, hey, we like it.

    Wednesday – grilled cheese sandwiches (the bread will be getting to it's last legs so better use it up)

    Thursday – day before last day of school… hmmm… how about BREAKFAST?! Pancakes, hashbrowns, fruit and scrambled eggs.

    Friday – last day of school. 11 yr old gets out after his awards (at 9:30am) and 8 year old gets out around noon. We might just grab a bucket of chicken and head to the pool!

    I have still not made my own chicken fried rice. I need to do this one day!
