Week one of school is done. It’s time to get back into menu planning for real.
Honestly, it’s the last thing I want to do right now, but I’m planning to stop by the store in the morning, and if I’m prepared, maybe it can be my only stop there this week.
I mentioned on facebook Thursday that I trimmed 12 lbs of chicken, separating some into meal-sized portions to freeze, and pre-cooking some. I also have about the same amount of ground beef waiting to be cooked, so that will determine some of our meals.
Tomorrow, we’ll have grilled hamburgers, and at the same time, I’ll pre-cook some meatballs and brown the rest of the meat.
Monday – Hamburgers and oven-fries.
Tuesday – Sliced Chicken breasts (already grilled and currently frozen) in faux-Alfredo sauce.
Wednesday – Meatballs in mushroom gravy, served over mashed potatoes.
Thursday – Chicken Stir Fry (check out my tutorial)
Friday – Out to Eat
Saturday – Picnic
Sunday – Dinner at In-Laws
