Menu Plan Monday

Today has been so fun, but I have to get this done. Menu planning has helped so much over the last several weeks in my quest for an orderly home.

I’m not feeling terribly creative this week. All three of my kids are in a wedding on Saturday which means that I have to drive 45 minutes one way to get my daughter’s shoes, and 45 minutes the other way to get my boys’ suits. Here’s hoping the suits fit so we don’t have to add another 45 minute trip on another day. Oh, the joys of living in a small town, far from “real shopping.” Since I know I won’t be in the mood to spend a lot of time on dinner prep, it’s all the more important that I plan out our meals.

Monday – Hamburger pizza with Jack-o-lantern pie for dessert! My 7yo wants to cook dinner so this was the option he chose. He really wanted to make scrambled eggs with ground beef because he’s sure he’s seen daddy make that. I’m pretty sure he uses breakfast sausage, but we don’t have any right now. If we did, I might let him make that. I just can’t handle the thought of ground beef with eggs tonight though. He’ll use the already cooked hamburger meat, and some boboli pizza crusts I got at the day-old bread store.

Tuesday – Grilled chicken breasts and Parmesan noodles.

Wednesday – Hamburger patties and mashed potatoes.

Thursday – Crock pot BBQ chicken sandwiches

Friday – rehearsal dinner

Saturday – Wedding

Sunday – Grilled chicken breasts (leftover from Tuesday and just heated up) with salad.
