Menu Plan Monday – The "Maybe This Week Will Be Normal" Edition

I’m so glad that I made a menu plan last week.  Even though I didn’t want to.

Having a menu plan meant that my trip to the store on Monday morning wasn’t a Random Act of Shopping.  I got what I needed for the things I was going to make.

Except for the ground beef.  That was supposed to wait until Wednesday so I could catch it on sale, but then the week was turned upside down by weather that closed the schools for the rest of the week.  So, even though I couldn’t follow the plan exactly, having one meant that we were able to eat at home all week (except . . . of course . . . for the day Chili’s sent out an email saying that our area was having a Kids Eat Free day).

But now I have my 1.99/lb ground beef, ready to be cooked up all at once, and we’ll have the Cheeseburger Soup I’ve been craving this week.

Monday – Meatballs in Mushroom Gravy over mashed potatoes

Tuesday – Cheeseburger Soup

Wednesday – Grilled Chicken and cheesy mashed potatoes

Thursday – Mexican Casserole

Friday – Date Night

Saturday – Potato Soup (We had this last week, and LOVED it!)

Not that I wouldn’t love having my kids home all week for another week . . . but I’m hoping this menu goes as planned!
