Just a quick post to share my plans for freezer cooking next week.
I normally love to cook up a lot of meat, but at this point, I don’t have any sales available to stock up, so I’m going to keep using what I have until a sale comes along.
But, I always appreciate some external motivation like Money Saving Mom’s Freezer Cooking Days to kick me into doing some things I’ve meant to do, but haven’t.
Breakfast has been a struggle lately. I would like to feed my kids more substantial breakfasts, but rarely think ahead enough to really do so. Mornings are crazy even with the headstart I get from doing my evening tasks, and I rarely do much more than oatmeal, cold cereal, or granola bars with fruit for breakfast.
So, I’m focusing on breakfasts. I recently made a recipe of breadsticks, and according Our Best Bites, the site where I found it, it can also be used to make breakfast pockets. So the plan is to make some egg and cheese (maybe sausage or ham as well) breakfast pockets.
I also whipped up some pancakes a few nights ago when we had breakfast for dinner (not part of the menu plan, but oh well) and remembered how little trouble it is to do that.
So pancakes and breakfast pockets are the plan for this week. Hopefully, this will make our mornings run even more smoothly.

I'm trying to do Freezer Cooking Daze Mon and Tues but hubby came down with the stomach bug…so my plans might be pushed out. And I haven't shopped for it. That's always a problem…
About the pancakes – do you have a griddle? My MIL got me one for Christmas and it makes pancakes ridiculously easy since you can cook 6-7 at a time. I used to avoid them since I could only do 3 little ones at a time, but now they cook so fast we eat them often. And for dinner sometimes too. 🙂

Yes, I love my griddle. I use it for grilled cheese, quesadillas, anything I can.
I need a griddle, I have been puttiong it off but you too make it seem like such a necessity LOL It is on my list of things I want maybe I will put it closer to the top!!
Did I finally, finally find someone like me???? I'm not so great a housekeeper either! I try my best but, boy, do I suck at it sometimes.

try making extras of the pancakes and waffles on the weekend and then put them in the freezer. You've already made the mess so why not get another meal out of it? we microwave them briefly to thaw out the middle, then put them in the toaster oven.
I’m loving your tips on cooking/freezing meat, and was going to do a bunch of rice this week…was being the key word here. I kept forgetting to order the rice cooker from Amazon, so I picked one up at a combination grocery/department store, brought it home…and discovered it was a non-stick pan, so I took it back (Google how heating non-stick pans can kill birds, and how non-stick pans are causing birth defects). Now to remember to order the pan.
But for breakfasts, have you ever tried making and freezing breakfast burritos? You cook and drain sausage just like you do your burger for freezing. Add beaten eggs, any veggies you might want to include, scramble it, and then add American cheese. Warm tortillas, fill with the egg mixture, roll up, wrap and freeze. My son LOVES these. I’ll have to see how they work on corn tortillas for me, but I may wind up doing exactly that. I’m also going to try freezing zip top bags of sausage gravy and packages of biscuits.
Yeah, I’m totally getting into spending a little more time cooking a few days a month, then being able to pull a meal together fast. I mentioned that we were having spaghetti to my son after supper tonight and he grinned and said it won’t take long with the cooked burger in the freezer. He’s getting into it, too. 🙂
I often make french toast ahead, especially when I get a good deal on eggs and bread. I’ll make a whole loaf of bread into french toast. We’ll eat a few and then when the rest are cool, I stack them with a piece of wax paper between each and put the whole stack (usually two smaller stacks fit better) into a freezer bag and freeze them. Then in the mornings I can pop one or two into the toaster.
