So strange that I’m this excited over menu planning. When Laura over at orgjunkie.com says that menu planning is a great way to start getting organized, she’s right. I’m not sure why, but she is. It actually seems that my kitchen stays cleaner when I have meals planned.
This is a crazy week. My quite-intense Bible Study begins this week as does the Moms Group I’m in charge of. And I’m the speaker! Of course this has to happen in the week when we’re having a huge bash for my dad’s birthday/retirement. And of course I’m in charge of the picture presentation of his life story. A normal person might have spent a month working on that, but not me. I’m the perfect example of a procrastinator.
Since this week is busy busy busy, I’m planning very simple meals, using the crockpot more than once. The crockpot prevents takeout!
Monday – chili over rice. I’ll use the already cooked ground beef so this can be thrown together quickly to and cook in the crockpot all afternoon.
Tuesday – Grilled chicken breasts and baked potatoes
Wednesday – Hamburger patties in mushroom gravy served over mashed potatoes. Because the patties are already cooked, this is an incredibly quick supper that is very homey. Total comfort food.
Thursday – chicken and biscuits based on this recipe I found searching online – we’re all here to inspire each other right?
Friday – dinner out
Saturday – Birthday bash
Sunday – leftovers or sandwiches

I want to menu plan. But I never know if I’ll have enough energy to cook a more time consuming meal that might be scheduled. I love the idea of freezer cooking. I did that for a while and then stopped (?). I really like the idea from your earlier post of cooking all your ground beef before freezing. One of the issues for me is that after a big shop the last thing i feel like doing is cooking. I’m going to have to plan to just buy the meat so I then have the motivation to do it straight away.
I love cooking in the crockpot, but wasn’t doing it. The BBQ chicken post was a revelation! Putting the meat in frozen eliminates a few steps, plus I don’t thaw the meat, then have to throw it out because I don’t get around to cooking it. Then, I saw the ground beef, canned tomatoes & beans post. I put in frozen ground turkey, diced tomatoes (didn’t have whole), & ranch style beans with jalapenos. It was delicious. I tweaked the leftover with chili powder & it made a good chili.
