I’m so relaxed right now.
My house is a wreck, with Christmas candy and boxes still strewn all over the floor since we left the house at noon on Christmas day and arrived back home late last night.
And I’m just not the type who has to have things picked up before I can think about going to bed.
Wish I was . . .
Anyway, I thought I’d better make a menu plan for the week, lest we end up justifying Chinese one night, Italian another, and burgers the next. All take-out of course. It’s just so hard to accept that even though we’re “all” on break right now, my responsibilities just keep on going.
So I’m planning around the leftovers we have in the freezer from Christmas parties and such.
Monday – Leftover steak and chicken (from Christmas Day’s arctic grill-out session), baked potatoes and corn. The men suffered and tested out their new winter coats while we laughed and talked inside the toasty house. I don’t want to let their efforts go to waste.
Tuesday – Birthday Boy’s Choice!!! (I’m guessing pizza . . . since he’s 9 and all.)
Wednesday – BBQ chopped beef leftover from a Christmas party.
Thursday – Fajitas . . . also leftover from a Christmas party
Friday – New Year’s Eve . . . several choices for activities, not sure which one we’re doing yet.
Saturday – Spaghetti (easy as can be with my pre-cooked ground beef)
Sunday – no idea whatsoever.
There we go. A menu has been planned. I’m assuming that it will change at least once, but now if I start getting the “what’s for dinner” question, I can check this post instead of staring blankly.

Yeah, I can also go to sleep with a mess. Like you, I wish I wasn't like this, but alas. Leftovers sound like the perfect menu plan for this week!

What? You mean the elves don't pick up the mess for you either??? Little slackers!
And we had spaghetti last night with already cooked ground meat. There was even enough sauce for me to put in the freezer. First time I thought about making enough to do that!
