Menu Plan Monday

Has it only been a week since I made the last menu plan? It feels like forever ago. I did make a few things from the plan, but I was also blessed by someone making us a surprise meal.
Here goes:
Monday – chicken pot pie using the frozen cooked chicken from when I made chicken soup a few weeks ago.
Tuesday – Crockpot beef over rice. I think I’ve had this on the menu for three weeks, and I still haven’t actually made it. I’m also going to cook extra rice and freeze it to use in chicken fried rice at a future time.
Wednesday – Spaghetti using the already cooked ground beef – NEW TIP: I cooked up some more ground beef to freeze last week and tried a new trick. The last two times I have put the ground beef in one big freezer bag, I have had a terrible time breaking it up to use in recipes. I don’t remember this being the case in the past, but it was a big problem these two times. So, when I cooked some last week, I let it cool completely and then froze it spread out on two cookie sheets. Then, once it was frozen, I broke it up and put it into the gallon size freezer bags. This way, I can use smaller amounts easily.
Thursday – Crockpot chicken soft tacos – Cook chicken in the crockpot on low for about 5 hours, with a can of rotel. Serve with flour tortillas, lettuce, cheese and sour cream.
Friday – eat out!
Saturday – homemade pizza
Sunday – leftovers

    Yum- chicken pot pie. I haven't made that in a few weeks. I may have to make that for dinner tomorrow.

    I used 1 quart sized bags… put roughly a lb in each sense most recipies require “1 lb” or “2lbs” theres no breaking.. no mess in thawing… no extra dishes.. yes… cost a bit more..but sometimes it worth it!

    I had to Google what ‘rotel’ is…and your recipe sounds luscious. I have a gluten intolerance so I can’t use most seasoning mixes, so alternatives like this would work very nicely…but on corn tortillas for me. 🙂

    Still catching up, so, though I read ALL the posts, I haven’t really started Meal Plan Monday. However, I thought I would share that I bought a rice cooker. It seemed kind of crazy, since I’m trying to get rid of stuff, but when I read that I could make any rice meal in it, plus add meat, & it would switch to warm all on its own – I was sold. I’ve also been using the crock pot more. Overall, I’m eating better. Thanks to you & to all the commenters. 🙂
