Not feeling so good today. All the more reason to have a plan. I was craving chicken soup tonight, but hubby offered to grab dinner. Even better.
I’ll make the soup tomorrow. When bone-in skin-on chicken breasts are under a dollar a lb, I love to buy a bunch and boil them. We’ll have soup the first night, and then I’ll have lots of cooked chicken to put in other dishes in the future. Tonight I bought 7 lbs, so it should make quite a bit of cooked chicken to freeze.
Monday – takeout (I’d hate to hurt my husband’s feelings by refusing his generous offer)
Tuesday – Homemade chicken soup (with the way I feel right now, I think it’ll sound equally good tomorrow.)
Wednesday – Crock pot BBQ sandwiches – I think I’ve had this on my menu for the last several weeks, but it hasn’t happened. Here’s to giving it a shot this week.
Thursday – hamburger patties in mushroom gravy over mashed potatoes
Friday – dinner out
Saturday – Boy Scout family camp AAAAAHHHHHH!!! (first time, little scared)
Sunday – Grilled cheese and canned soup or maybe some leftover chicken soup from Tuesday if we have it.
Sorry for the lack of excitement in my menu, but I’m about ready to say that I’m officially sick. We can’t afford the luxury of grabbing dinner every night this week even if I am sick. Thus the beauty of menu planning. It’s the best antidote for eating out that I know of.

I used to have a section in my recipe box for the meals I cooked regularly…including the ingredient list, and approximate cost for each one. Then when it was time to shop, I could go through the cards and figure out what to serve. Someone I knew from the country extension office (something to do with the university) asked me to teach a class on it. Um…yeah, not into public speaking, but thanks for asking.
Anyway, I should do that again because your meal planning is sounding better and better. 🙂
