Now that my horrible, terrible, very bad kitchen is clean(ish), I’m determined to get this menu plan done. Somehow, the kitchen is easier to clean when I have a planned menu. I’m not sure how that works, other than that maybe I don’t pull things out as a part of an idea to make something, and then leave them out when I realize that I don’t have the other ingredients needed.
Maybe that’s it.
Monday – Chicken Fried Rice. I have pre-cooked chicken, and I’m cooking the rice in the rice-cooker tonight, so this should come together in a snap.
Tuesday – Beef Fajitas found during my deep-freeze excavation
Wednesday – Chicken spaghetti
Thursday – Crock pot Enchiladas using this fabulous enchilada sauce
Friday – Out to Eat!
Saturday – I’m leaving this open for an anniversary dinner date.
Sunday – Frozen Pizza

Ooooh, thanks for the link to the enchilada sauce! I have all of those ingredients on hand. Enchilada sauce is TOO expensive in the store!

I made these with my own enchilada sauce. my family liked it but I thought they were almost inedible. The middle 7 tortillas were slime. I used flour so I'm wondering if the corn ones make that big a difference? I noticed that the steam condensed and rolled down the side…maybe need to put paper towels between the lid?
any help would be appreciated I LOVE the idea of this recipe.

I always use corn tortillas, as in my mind, flour tortillas equal burritos, and corn tortillas equal enchiladas. If the corn tortillas disintegrate, it just becomes the dish, rather than slimy. Did that make sense?

Woohoo for a yummy, easy enchilada sauce! I always buy mine at a discount store with dinged cans because I can't stand to pay full price!

Honestly, I found this enchilada sauce when I had bought some and then happened to read the ingredients and it had COCOA in it!!! I'm allergic to chocolate, so I had to find an alternative.
