Last night, we had a church group meet in our home, and someone brought a fabulous cheesy chicken enchilada casserole.
A normal person might think to herself, “I should really get this recipe.”
I thought to myself, “I should really use recipes more often.”
I tend to be “creative” at the expense of being delicious. I need to break out the cookbooks and have a few adventures.
But, alas, this isn’t the week for that. So, I’m making my menu plan in an effort to survive. I don’t know that the last three weeks of school/height of baseball season is the best time to get fancy in the kitchen.
Monday – Grilled Chicken Breasts, steamed broccoli, and mashed potatoes.
Tuesday – Chicken Fried Rice
Wednesday – Spaghetti
Thursday – Chicken fajitas (using grilled chicken cooked on Monday)
Friday – Pizza
Saturday – Hot dog pigs-in-blankets
Sunday – Sandwiches

Creative at the expense of being delicious – ha! I have the opposite problem, I'll stick out a recipe to the letter even though something doesn't sound quite right or that it has something we don't really like. I'm just starting to get good at tweaking a little from the get to to up my chances of success.
