Menu Plan Monday – Surviving the Last Week of School

Happy Memorial Day!

The boys are out fishing, so I’m taking advantage of some free time to put more thought into my menu plan than I have in a while. This week is full to the brim with kindergarten graduation and a baseball game for the same kid on the same night (grrrr), and games every other night as well. If I don’t plan now, we’ll be eating bologna for every meal . . . and my sweet, good-natured hubby won’t be able to keep his true feelings about that from showing on his face.

I’ve also spent some time on Weightwatchers.com, determining the points values of my menu for the week. I’m wondering if I’ve hit that “age” in the past week where weight becomes more stubborn. Typically, in the past, I’ve been able to exercise and watch what I eat for a few days and a few pounds would come right off. Last week, even though I did the horrific 30-Day-Shred three times, and thought I was eating better, I’ve gained two more pounds. I’ve decided to get back to doing what works, that crazy thing called What-I’m-Supposed-to-Do.

So here goes:

Monday – Chicken Fajitas (I’ll be eating mine sans cheese and sour cream to make up for my pre-9 a.m. doughnut failure)

Tuesday – Kindergarten Graduation night – We’ll let the grad pick something to grab on the way from his graduation to his game.

Wednesday – Crockpot Enchiladas – I saw this recipe a while back on Lifeasmom.com, and it’s fabulous! Especially using this home-made enchilada sauce recipe I found. According to hubby, it tastes like our very favorite Mexican restaurant – quite a compliment! All you do is layer sauce, pre-cooked ground beef, shredded cheese, and corn tortillas in the crockpot, and then cook for about 4 hours on low. Nothing is raw in it, so it cooks more quickly than most crockpot recipes.

Thursday – Crockpot BBQ chicken sandwiches, since I never made them last week.

Friday – Out to eat!

Saturday – Grill out steaks

Sunday – Church picnic

    I love the name of your blog! Your Life As a Mom link is broken, do you have the link to the actual recipe? I'd love to try it!

    I love your menu, if dh liked Mexican more mine would probably look more like it!
