Again, I regretted neglecting a menu plan last week. Even my kitchen seems to stay cleaner when I have a plan, and the reverse when I don’t. Who knows how that works?
And thinking about my menu now probably saved me a decent chunk of money. I have a roast in the fridge that needs to be cooked, and knowing my scatter-brained self, I’d forget about it and let it go bad if I didn’t plan a specific time to make it!
Monday – Roast in the crock pot with mashed potatoes and steamed broccoli
Tuesday – Cheeseburger pockets — I made breakfast pockets over the weekend, but didn’t have enough cheese to also make the cheeseburger ones. I’m going to use the same recipe as the breakfast ones, but fill them with pre-cooked ground beef and shredded cheese. I’ll make enough to freeze and have for quickie meals during baseball season.
Wednesday – Chicken fried rice
Thursday – spaghetti – I’ll make an extra large batch of sauce to use in making spinach lasagnas to freeze.
Friday – Eat out
Saturday – Dinner at friends’ house
Sunday – Quesadillas

Love the cheeseburger pockets idea! I've made pizza pockets and sausage/onion pockets, but never cheeseburger ones–that escaped me somehow!!

I did a similar cheeseburger roll a while back, and we just loved it! I mixed in a bit of chopped ham, diced onions, then some ketchup-mustard-sweet relish along with cooked beef.
Now I'm going to have to try your breakfast version! What a great idea – thanks!

I definitely need to start cooking ahead! I've been pretty good with the menu planning, but the household would run along much more smoothly if I cooked some freezer meals!

This post gave me the idea to do taco pockets for my teenager never full almost 16yo boy! He is always starving and this is definitely something he would eat – and I would imagine, be able to help make, too! Thanks for the inspiration (your whole blog has been/is, but that will have to be another comment another day)!

You may have posted this somewhere else, but since I’ve finally started reading from the beginning instead of just random posts, I haven’t seen it yet. How do you make your spaghetti sauce? Is it cheaper than buying canned/jared? I usually just use the hunts sauce that I can get for $.98.
On another note, as I read through your posts, I think so much like you. It’s amazing to me! I know you hear that a lot. I have two kids, 4 years and 7 months, and I always thought it would take having kids to turn me around. NOT the case. I, like you, have thought that about every other stage of my life too. You have motivated me far more than any thing else. Seeing where you’ve come from helps more than I can say! Thank you for being real and honest in your journey! I totally wish we lived in the same town, so I could know you for real!

I do have a spaghetti sauce recipe I posted at one point, but I also like to keep the Aldi jarred sauce on hand. Soo easy!
