Menu Plan for the First Normal Week of Summer

Yes.  I know it’s mid-July.

This is truly our first normal week.  We’ve been involved in baseball season followed by city baseball playoffs followed by vacation followed by district baseball playoffs.

Unfortunately (no, really), both boys lost last week and we no longer have to worry about eating and living around a sometimes-not-announced-until-the-day-before playoff schedule.

I’m okay with that.

Here’s our menu plan for the week:

Monday – Chicken Tacos

Tuesday – Asian Slaw

Wednesday – Chicken Parmesan Casserole

Thursday – (hoping to be at an amusement park)

Friday – Out to eat

Saturday – Grilled Chicken and baked potatoes

Sunday – Leftovers

Unexpected Freezer Cleanout

Friday morning, Hubby carefully assessed my mental state and gently broke the news.

The freezer side of our side-by-side fridge wasn’t cooling.  Things were melting and water was leaking out and covering the floor.  Soon, we realized the fridge side wasn’t working either.

Soooo, we loaded up the rolling ice-chest and made a few trips to haul the still-mostly-frozen stuff to the deep-freeze in the garage, and the most necessary refrigerated items to the small fridge in the gameroom.

In a moment of forced optimism, Hubby decided that the bright side was that I hadn’t done much grocery shopping lately and we didn’t have a lot of food in the fridge anyway.

Har-dee-har-har-har, Honey . . . .

Sooo, as I found countless treasures in the recesses of the freezer, I decided to avoid the Massive Grocery Trip a little while longer and try to eat from the freezer as much as possible.

Our Menu Plan this week:

Monday – Spaghetti (using the last bits of three different bags of frozen pre-cooked ground beef)

Tuesday – Deli Wraps

Wednesday -Chicken Fried Rice (using frozen rice and frozen chicken)

Thursday – Quesadillas

Friday – Out to Eat

Saturday – Grill Out

Menu Plan for the First Week of Summer!

This menu plan will be short and sweet!  We’re still in baseball/picnic season, but I am completely out of new picnic ideas, so I’m planning to re-do our favorite new one from this season.  Tacos in a bag! Yum!

(Anyone have any more great picnic ideas I can try for our last week of baseball?)

Honestly, I’m so excited about the response to my new (FREE) e-book, Teaching Kids to Clean, that I was incredibly tempted to not even make a menu plan because I wanted to get started posting in my new summer series on that theme.

But . . . I know better.  Living without a menu plan makes this scatter-brained mama even more scatter-brained . . . and results in a week of not-so-fab meals being thrown together frantically at the last minute.  I’m all about throwing together meals in a minute, but I’m not all about the frantic part, and a menu plan takes care of that!

So here goes.  Our menu plan for the first week of the summer:

Monday – Picnic Tacos in a Bag

Tuesday – Chicken Fried Rice

Wednesday – Baked Potatoes

Thursday – Crockpot chicken over pasta

Friday – Out to Eat

Saturday – Chicken on the grill, baked potatoes and salad

Whew.  Now that’s out of the way and I can concentrate on teaching the kids to clean and having a little LOT of summer fun!
