After the craziness of Snow Day + Natural Weekend Chaos, I’m ready to get some control over this house again. Although today is a holiday for the kids (translation – another day of no routine for mama) menu planning will help me get there.
Monday – French Dip Sandwiches for our Family Romantic Dinner
- We had things going on for Valentine’s Day, so we’re going to have our annual romantic dinner on Monday night. We light candles and dress up, and eat in the dining room. It’s become tradition to have French Dip Sandwiches, which are special but oh-so-easy! Just get thin sliced roast beef from the deli and some nice bread and sliced provolone. I put the beef on one side of the bread, top with the cheese and melt under the broiler. I then toast the other side of the bread and give everyone their own small bowl of beef broth to dip their sandwich in. It’s nice to have something simple so that I can focus on making the other parts of the experience special.
Tuesday – Chicken breasts in a mushroom/sour cream sauce, served over pasta.
Wednesday – Hamburger patties and mac-n-cheese
Thursday – Jambalaya
Friday – Out to Eat!!!
Saturday – Homemade pizza
Sunday – Someone else is bringing food for our home groups – YAY!

Working on keeping the summer chaos at bay, so far it’s not working. I have so much laundry to do and work uniforms that HAVE to be done, but the pool is calling our name . Hope to keep up and get into the groove that helped you make it through the snow storm.
